
This came to me as an epiphany when I was writing the menu for Farmhouse on Main. I did not want to offer French Fries, but I needed something for a side. I all so did not want Russet Potatoes
served as Baked Potatoes. The reason was, what do you do with the leftover Bakers. We did not serve breakfast, hash browns weren’t an option. The answer was brilliant, Red “B” Potatoes and make sure that you have enough for dinner and leftovers. I did not realize just how popular they would become. Every one loved them Young and old. Most people did not want Catsup with their Wagon Wheels. I was surprised. They look like Wagon Wheels !!! Everyone wanted the recipe.
Wagon Wheels for 2
Ingredients:
6 Red “B” Potatoes
Olive Oil
Salt and Pepper
Pecorino Cheese ( optional )
Directions:
Wash the potatoes and place in a bowl drizzle with a little Olive Oil and sprinkle with
Salt and Pepper. Place on a oven pan and in a 425 degree preheated oven.
Bake 45 minutes to an Hour, until very soft to the touch. Cool over night.
Slice about 1/4 inch. Heat enough Olive Oil to cover the Potatoes. When the oil is hot 350 degrees
carefully place the potatoes in the Olive Oil. I like to use a basket for this.
Let the Potatoes cook until golden brown. Lift the basket or if no basket then a
holy spoon or a skimmer will work. Let the Olive Oil drain off place in a bowl and
season with Salt and Pepper. Plate and sprinkle with Pecorino Cheese Grated ( I use a rasp ).
